At Mingo’s Latin Kitchen, it’s all in the name.  Sure, they’ve got tacos and loaded fries, but it’s the little things that set Mingo’s apart from other fusion trucks. In addition to chicken and pork as your meat options, Mingo’s is also slinging brisket, using it for Cubano-esque sandwiches and even stuffing it inside empanadas. Don’t skip any of their 4 signature pico de gallos (classic, roasted corn, mango, and pineapple)!

Gourmet Tacos
2 Flour Tortillas, Choice of meat, pico de gallo, lettuce, cabbage, cilantro ranch . Sauces are Chipotle Mayo or Tomatillo Sauces
Mingo's Sandwich
Hoagie bread with choice of meat, shredded cheese, choice of pico de gallo or adobo cole slaw.
Veggie Empanada
Fried Latin pastry stuffed with cheese and sauteed veggies, topped with roasted corn, black beans, pico de gallo, crispy cabbage, cilantro ranch, sauce.
Nachos
Fresh Tortilla Chips , House made Queso , Shredded Cheese , Pico de Gallo, Cilantro Ranch, Cotija . Choice of Beef, Pork, or Veggie.
Loaded French Fries
Hand Cut French fries with choice of Chicken-Pork-Brisket-Veggie, sauce, and pico de gallo topped with queso fresco and Cilantro Ranch . Sauce choices are Chipotle Mayo or Tomatillo. VEGETARIAN OPTION AVAILABLE
Mingo's Fries
Hand Cut Fries, Queso, Choice of Beef, Chicken, or Pork, Cotija Cheese and Cilantro. Topped with a Fried Egg
Veggie Loaded Fries
Hand Cut Potatoes topped with Sautéed Spinach, Roasted Cauliflower, Tomato Onions, Roasted Corn, Mushrooms, Shredded Cheese, choice of Sauce, and a Fried Egg (Egg is Optional).
Fish Tacos
Cod fish beer battered fried or sautéed on two flour tortillas with lettuce cabbage mix, Chipotle Mayo or Tomatillo Sauce. Topped with Mango Pineapple Pico de Gallo.
Brisket Empanadas
2 Fried Latin pastry stuffed with Cheese and brisket, hand pressed and fried. Topped with sauce, and pico de gallo, topped with cilantro ranch and queso fresco. Sauces are Chipotle Mayo or Tomatillo

Hawaiian bun, cheese, lettuce, onions, cabbage, and spicy mayo

Cuban Style Sandwich . French bread, choice of Chicken or Pork, pickles, spicy mustard, lettuce, cabbage, and crispy ham.
Veggie Tacos
Arugula, Tomato, Onion, Corn, Garlic, Portobello Mushrooms sautéed to order in herb oil, topped with choice of Sauce and Pico de Gallo.
Quesadillas
Flour Tortillas , 4 Blend Mexican Cheese, choice of brisket, chicken, pork, or veggie . Garnished with cilantro ranch , Pico de Gallo , and Cotija Cheese.
Oso Bueno Fried Chicken Sandwich
Brioche Bun, Beer Battered Fried Chicken, Choice of a Spicy or Mild Sauce, Adobo Cole Slaw and Cheese.
